In the magnificent courtyard of the Carnavalet museum, which retraces the great history of Paris, are revealed tables and chairs specially installed for the ephemeral restaurant “Fabula” throughout the summer of 2022. Its name is taken from the word “history” in Latin, making reference to the museum which houses it in this garden out of sight, in the heart of Paris. A hidden restaurant Generous and responsible, the menu is developed by chef Thibaut Spiwack, around four very gourmet families: vegetable, fish, meat and finally sweet.

A green star in the Michelin guide
The chef, famous since the show Top Chef, received a green star in the Michelin guide, thanks to his cuisine which always offers local, seasonal and short circuit products. Responsible cooking is Thibaut Spiwack’s golden rule. Everything that makes up its recipes is sourced in France, from reasoned certified farmers. Nothing takes the plane, everything is in short circuit. Peelings, bark, everything finds its place in his kitchen. Parisian ricotta gnocchi, burnt eggplant, cumin crackers and arugula pesto, lean ceviche, leche de tigre peach and tarragon, raw zucchini, or Norman beef gravlax with cognac, turmeric and cider mussels, mashed broccoli with horseradish…
