Poires Belle-Hélène recipe :

Ingredients :

  • 4 fresh, ripe pears
  • 1 untreated lemon
  • 1 vanilla pod
  • 1 stick of cinnamon
  • 25 cl of full-fat liquid cream
  • 1 vanilla pod
  • 10 cl of whole liquid cream
  • 100g dark chocolate
  • 400 g caster sugar
  • 1 untreated orange
  • 1 liter of water
  • 15 g of icing sugar
  • 8 cl of whole milk
  • 25 g of powdered sugar
  • 30 g of flaked almonds

Steps for Poires Belle-Hélène recipe :

  • Wash, peel the pears, cut them in half lengthwise and remove the core.
  • Toast the almonds in the oven for 10 minutes at 180°C, spread out well on a baking tray. Let them cool after cooking.
  • In a saucepan, pour 1 liter of water, add the sugar, mix to melt, then add the lemon and orange zest taken from the peeler, the pulp and the scraped vanilla pod and the spices. Bring to the boil, then lower the heat and immerse the pear halves, let them cook for 10 to 12 minutes.
  • Check the cooking with the tip of a small knife which should fit easily, drain them using a spider and place them on a plate. Then slice them thinly on the board. In the very cold salad bowl, pour the cold liquid cream with the icing sugar and the pulp of the scraped vanilla pod.
  • Whip into whipped cream and set aside to cool.
  • In a saucepan, boil the milk and cream with the sugar, pour over the chopped chocolate, mix and leave aside.
  • Place the sliced ​​pears on the plates, pour 1 tablespoon of chocolate sauce and 1 quenelle-shaped spoonful of whipped cream on the side, add a few toasted flaked almonds.
