Let fans of the famous panettones salivate now : the French master of this pastry, Christophe Louie, has opened his first store in Haut-Marais and it is already the unmissable sweet spot in Paris ! After 20 years in prestigious houses as a Pastry Chef, Christophe Louie decided in 2018 to attend the International Bakery School to specialize in making Panettone. He then went to Italy to train with Mauro Morandin, considered one of the best artisans and Master Panettonier in Italy. From his trip, he returned with a century-old strain of sourdough; fruit of work of passion and rigor which ensures Christophe Louie’s confections have an incredible texture. Christophe Louie then locks himself away for months, gets his hands dirty and searches for the perfect formula.

Christophe Louie sold more than 10,000 panettones!

Today he is the only one to have the recipe, which he offers in different versions, decorated with candied fruit or chocolate. Its delicate and delicious panettones are snapped up like hot cakes and delight customers who can buy them all year round and not just at Christmas. Another asset of the maestro : his recipes come in sweet or savory versions and are made with seasonal products. Between 2019, opening of online sales and September 2023, Christophe Louie sold more than 10,000 panettones ! A success that has not gone unnoticed. As soon as his store opened, Christophe Louie confided that he had been robbed, as reported by Christine Henry, journalist for the daily Le Parisien. Today, it is one of the most consumed desserts in the world. It’s even sold in Korea,” explains Christophe Louie, 49, to Journal Le Parisien. If the Italian specialty takes the spotlight in its new store, the windows are also stocked with large natural sourdough and ancient wheat breads, pastries, cookies, as well as a range of snacks.
