For the chocolate sponge cake
- 6 eggs
- 150g (3/4 cup) sugar

- 30g (1/4 cup) unsweetened cocoa powder
- 1 tsp baking powder
- A pinch of salt
For the cherry filling
- 350g (12 oz) cherries (fresh or canned)
- 50g (1/4 cup) sugar
- 1 tbsp cornstarch
- 2 tbsp Kirsch (cherry brandy) (optional, but recommended!)

For the whipped cream
- 500ml (2 cups) heavy cream (cold)
- 50g (1/4 cup) powdered sugar
- 1 tsp vanilla extract
For decoration
- Dark chocolate shavings
- Fresh cherries
🍰 Instructions
Step 1: Bake the Chocolate Sponge
- Preheat your oven to 180°C (350°F). Grease and line three 8-inch (20 cm) cake pans.
- In a bowl, whisk together eggs and sugar until pale and fluffy.
- Sift in flour, cocoa powder, baking powder, and salt. Fold gently to keep the batter light.
- Add melted butter and mix until just combined.
- Divide the batter into the cake pans and bake for 20-25 minutes. Let cool completely.
Step 2: Prepare the Cherry Filling
- In a saucepan, heat the cherries, sugar, and cornstarch over medium heat. Stir until thickened.
- Remove from heat and mix in the Kirsch. Let cool.
Step 3: Whip the Cream
- Beat the cold heavy cream with powdered sugar and vanilla until soft peaks form.
Step 4: Assemble the Cake
- Place one cake layer on a serving plate. Brush with Kirsch syrup (optional).
- Spread a layer of cherry filling and top with whipped cream.
- Repeat with the second layer.
- Add the final cake layer and cover the entire cake with whipped cream.
- Decorate with chocolate shavings and fresh cherries.
