Raspberry financier recipe by Cyril Lignac

Here is a traditional French recipe, raspberry financier. This one was created by chef Cyril Lignac, quick and easy, an ideal recipe for a Frenchy snack !

– Rapsberry Financier recipe –

Ingredients

100 grams Butter
60 grams Flour
90 grams Powdered almonds
150 grams icing sugar
1 pinch Fine salt
1 vanilla pod(s)
4 medium egg white(s) (1 egg white weighs approximately 30 g)
125 grams Fresh raspberries

Instructions

Preheat the oven to 185°C.
Prepare the browned butter. To do this, melt the previously diced butter in a saucepan. The browned butter is ready when it stops “foaming” and turns golden. To book.
100 grams Butter
In a mixing bowl, mix the flour, almond powder, icing sugar and salt. Add the vanilla pod seeds.
60 grams Flour, 90 grams Almonds, 150 grams Sugar, 1 pinch Salt, 1 Vanilla pod(s)
Gradually add the egg whites while mixing with a whisk.
4 egg white(s)
Finally add the browned butter while continuing to whisk the mixture.
In the previously buttered and floured mold (if it is not silicone), pour the dough. Then add the raspberries.
125 grams Raspberries
Bake at 185°C and bake for 35 to 40 minutes (depending on the diameter of the mold).
Leave to cool for ten minutes before unmolding.
Enjoy warm or cold.
