Yesterday morning, I decided to indulge in a little kitchen magic and created these exquisite Raspberry Cream Puffs. There’s something truly enchanting about choux pastry—how it rises so beautifully in the oven, creating a crisp shell ready to be filled with pure bliss. Paired with luscious whipped cream and fresh raspberries, these cream puffs are an irresistible French classic that you simply must try.



Ingredients:
For the Choux Pastry:
- 125ml (½ cup) water
- 125ml (½ cup) milk
- 100g (7 tbsp) unsalted butter
- 1 tsp sugar
- 1/2 tsp salt
- 150g (1 1/4 cup) all-purpose flour
- 4 large eggs
For the Chantilly Cream:
- 250ml (1 cup) heavy cream (cold)
- 30g (2 tbsp) powdered sugar
- 1 tsp vanilla extract
For Assembly:
- Fresh raspberries
- Powdered sugar for dusting
Instructions:
1. Prepare the Choux Pastry:
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a gentle boil.
- Remove from heat and add the flour all at once, stirring vigorously until the mixture forms a smooth dough that pulls away from the sides of the pan.
- Transfer the dough to a mixing bowl and let it cool for a few minutes.
- Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
- Transfer the dough to a piping bag fitted with a round nozzle and pipe small mounds onto the baking sheet.
- Bake for 20-25 minutes until golden brown. Turn off the oven and leave the puffs inside for 5 minutes with the door slightly open to prevent collapsing.
2. Make the Chantilly Cream:
- In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Transfer to a piping bag fitted with a star nozzle.
3. Assemble the Cream Puffs:
- Slice each choux puff in half horizontally.
- Pipe a generous swirl of Chantilly cream onto the bottom half.
- Add fresh raspberries on top of the cream.
- Place the top half of the choux back on and dust with powdered sugar.
