LIBERTÉ bakeries are revolutionizing the genre: by reconciling architecture and tradition, and by opening the laboratory to the view of gourmets.
The young guard of architecture
What initially sets the Liberté bakery apart from any other traditional bakery is its very contemporary appearance. At Liberté, we solicit the finest signatures from the young guard of architecture. For LIBERTÉ located on rue Saint-Dominique, interior designer Emmanuelle Simon has chosen to integrate Fabienne L’Hostis’s unbleached raku ceramics into the furniture of this atypical bakery which gives pride of place to design.

The taste of yesteryear
In this new kind of bakery, we cultivate the menu of daring and good taste. Behind this new pastry-bakery concept, entrepreneur Mickael Bénichou, whose years of experience between New York and Paris, fueled this ambitious project: why not apply to bakery and pastry the same thirst for sharing and transmission than in catering? Why not open up these stalls more and more ? The team uses natural sourdough, mixed flours, cereals, all without additives, which gives the bread a real taste of yesteryear. The traditional baguette is excellent, just like the granola bread with whole hazelnuts, walnut kernels and soft raisins or the one with kneaded chocolate and made in the traditional way with in addition cocoa powder and dark and white chocolate chips. A true uncluttered cocoon where products are in the spotlight, a visit is a must. The hardest part will be to choose between the fondant of a lemon pie or the pop colors of a baba, not to mention the bread, crispy to perfection !
