We knew the classic croissant and the croissant topped with ham and butter, very fashionable in the 80s. This new version created, among others ,by the restaurant Capitale Belleville in Paris is overflowing with delicacies: chiffonade of white ham from Paris, thin slice of cheese , avocado sharp as a knife, tomatoes and lettuce. No butter to bind everything together (the croissant is already fond of it) but a very successful mayo and yellow mustard. This “croissandwich” is likely to launch a new trend…
Chefs are creating their own croissandwich
More and more chefs and major brands have also created their own “croissandwich“, a sandwich where the fresh croissant is used as an ultra-gourmet bread, ready to accommodate all sorts of toppings, from the most rustic to the most American. Among them, Cédric Grolet Opéra, the pastry chef has taken up savory delicacies with crazy sandwiches but also proposals for brunch that make our heads spin. Among them, the Croissant Bénédicte with its coating hollandaise sauce, topped with Isigny butter, fresh salmon, avocado, lime hollandaise sauce.
