I finally managed to make “Chouquettes” that I liked. Usually they fall out of the oven and are soft and sticky. But this time, I improved my recipe, they are well inflated and crispy as I like them.

Ingredients for 4 persons
For 35 chouquettes:
25 cl of water
1/2 teaspoon of water
1 heaped tablespoon caster sugar
1 sachet of vanilla sugar
80 g butter
125 g flour
4 large eggs
large crystal sugar

PREPARATION
1 Preheat the oven to 200 ° C (thermostat 6-7). Heat the water, salt, powdered sugar, vanilla sugar and butter in a saucepan. When the butter is completely melted, pour in the flour at once and mix with a wooden spoon over low heat, until the dough comes off the wall.
2 Out of heat, stir in an egg and mix until completely absorbed. Do the same with the other three eggs.
3 Depose spoons of spaced dough on a baking sheet covered with parchment paper (the puffs will swell when cooked). Then place sugar crystals on each chouquette. To finish Put in the oven for 15 minutes then lower the thermostat to 175 ° C (thermostat 6) and cook for another 15 minutes.
